• Greenish-white skin hides a vivid rose-pink centre — a true surprise when sliced open

• Crisp, juicy flesh with a mild, sweet flavour and gentle peppery finish

• Excellent raw, thinly sliced for salads, carpaccio, or aperitif platters — retains its colour and crunch beautifully

• Large round roots, best harvested at golf ball to small apple size for perfect texture

• Stores well and becomes even sweeter in cool weather — ideal for late summer and autumn sowings
